  • Butter 0.5 tbsp
  • Curry Spice 1 tsp
  • Vegetable oil 0.25 tbsp
  • Lemon 0.25 pcs

  1. Prepare the ingredients. This is what's coming to your plate – prepare the ingredients in advance so the work flows smoothly 🍠🥩

  2. Cut the sweet potatoes. Peel the sweet potatoes and cut them into evenly sized cubes. The smaller the pieces, the shorter the cooking time and the more even the softening.

  3. Cook the sweet potatoes. Place the sweet potatoes in a pot of salted water, bring to a boil and cook for about 10–15 minutes until tender.

  4. Prepare the honey dressing. In a small bowl mix honey, lemon juice, optional zest if you have an organic lemon, curry, salt, pepper and a tablespoon of oil per portion. Stir everything into a smooth dressing.

  5. Sear the chops and glaze. Heat oil in a pan over high heat, add the pork chops and sear them for about 3–4 minutes on each side until golden. Then reduce the heat, add the honey dressing and baste the meat with the dressing for another 1–2 minutes.

  6. Drain and mash the sweet potatoes. Check the cooked sweet potatoes, drain and return them to the pot. If you have butter, add a few knobs, season with salt and pepper and mash the sweet potatoes into a coarse purée.

  7. Plate. Place the mashed sweet potatoes in the center of the plate, top with the pork slice – either whole or sliced. Pour over the pan juices and sprinkle with sesame seeds.

  8. Serve. If you have fresh herbs at home, such as parsley, use them to garnish and serve immediately 🌿🍽️
