A crispy chicken schnitzel served with buttery potatoes and fresh parsley. The chicken breasts are coated in a Parmesan mixture and then fried until golden brown. It is a classic dish that is quick to prepare and delicious on the plate.

  • Breadcrumbs 25 g
  • Eggs 0.5 pcs
  • Plain Flour 12.5 g
  • Vegetable oil 50 ml
  • Butter 10 g
  • Lemon 0.25 pcs
  • Parsley 0.25 pcs
  • Italian Hard Cheese 0.5 tbsp

  1. Prepare the ingredients. Prepare all the ingredients and lay them out on the work surface - we will cook step by step from them 👩‍🍳🥘

  2. Chop the parsley. Finely chop the parsley. You will use it to season the potatoes when serving.

  3. Cook the potatoes. Put the potatoes into a pot of salted water and cook for 30 minutes. They are done when a fork goes in easily.

  4. Slice the chicken breasts. Slice the chicken breasts into thin pieces.

  5. Prepare the egg mixture. Add the eggs, salt, and pepper to a bowl and whisk everything together well. Optional: You can add a little Parmesan or another hard cheese; it will nicely flavor the mixture.

  6. Coat the chicken schnitzels. Coat the chicken slices first in flour, then in the egg mixture, and finally in breadcrumbs so they are completely covered.

  7. Shape the schnitzels. Press the breadcrumbs onto the schnitzels so they have a nice shape and are evenly coated.

  8. Fry the schnitzels. Heat sunflower oil in a pan and fry the schnitzels for 3 minutes on each side until golden brown. Then transfer them to a paper towel to drain the excess oil.

  9. Check the potatoes. When the potatoes are done, remove them from the pot and transfer them to a plate.

  10. Peel and cut the potatoes. Peel the potatoes and cut them into cubes.

  11. Melt the butter. Melt the butter in a small saucepan over low heat or in the microwave.

  12. Mix the potatoes with parsley. Place the diced potatoes in a bowl, add the melted butter, optionally chopped parsley, salt, and pepper, and gently mix everything together.

  13. Serve. Serve the chicken schnitzel with the potatoes in the center of the plate. 😋🍽️ Optionally garnish with parsley and you can also drizzle with lemon juice.
