  • Smoked pork ham 25 g
  • Eggs 1 pcs
  • Sour Cream 50 g
  • Nutmeg 0.5 tsp
  • Chives 0.25 pcs

  1. Prepare the ingredients. Prepare all the ingredients - we will be cooking with them in a moment 🥔🥚✨

  2. Grate the potatoes. Peel the potatoes and coarsely grate them on a grater, trying to make the strands as long as possible so they hold together better when frying

  3. Mash and salt. Salt the potatoes and thoroughly mash them so they release excess water

  4. Dry in a tea towel. Squeeze the potatoes in a clean tea towel so they are as dry as possible and beautifully crispy after frying

  5. Season the mixture. Season the grated potatoes with nutmeg, garlic pressed through a garlic press, and pepper

  6. Fry the rosti. In a pan, fry the rosti over medium heat until golden brown, about 3-4 minutes on each side

  7. Poach the egg. Carefully crack the egg into water with vinegar just below the boiling point (about 95 C) and poach over low heat for about 3 minutes

  8. Prepare the chive dip. Optionally mix chopped chives with sour cream, season with salt, pepper, and olive oil, and set some chives aside for garnish

  9. Serve with the egg. Serve with seasoned sour cream, the poached egg, slices of smoked pork neck, and optionally chives 🍽️✨
