Steps to cook
-
Prepare the ingredients. Prepare all ingredients and preheat the oven to 180 °C 🍗✨
-
Chop the parsley. Finely chop the parsley.
-
Chop the garlic. Peel the garlic and finely mince it.
-
Mix the butter with parsley and garlic. Mix the butter with the parsley, garlic and a pinch of salt.
-
Shape the butter. Shape the mixture into a log using plastic wrap or parchment paper and freeze for about 15 minutes to firm up.
-
Boil the potatoes. Meanwhile boil the potatoes in salted boiling water for about 20 minutes, until tender.
-
Slice the chicken breast. Make a lengthwise cut in the chicken breast, insert the prepared butter and roll the meat up like a roulade.
-
Coat the chicken. Dredge the chicken in flour, then egg, then breadcrumbs. You can coat it twice in breadcrumbs so the butter doesn't leak during frying.
-
Fry the chicken. Fry the chicken in a pan with oil for about 3–4 minutes on each side over medium heat until golden, then finish it in the preheated oven for about 10 minutes.
-
Serve. Serve; you can toss the potatoes with a little butter 🍽️✨
