Fried Hand Cheese With Potatoes

This recipe for fried tvarůžky is inspired by Czech cuisine. Olomouc tvarůžky are coated in flour, eggs and panko breadcrumbs and then fried in a pan until golden. They are served with butter, fresh herbs and boiled potatoes. It is a vegetarian dish with rich flavor and interesting texture.

  • Potatoes 120 g
  • Breadcrumbs 25 g
  • Eggs 0.5 pcs
  • Plain Flour 30 g
  • Butter 0.5 tbsp
  • Tartar sauce 2 tbsp
  • Lovage 0.25 pcs

  1. Prepare the ingredients. This is what awaits on your plate – crispy fried tvarůžky with buttery potatoes and lovage 🧀🥔 Prepare all the ingredients in advance so the work goes smoothly.

  2. Cook the potatoes. Bring enough water to a boil in a pot, season it with salt and add the potatoes. Cook over medium heat for 20–25 minutes until tender (check with a fork). Then drain the water and let the potatoes cool slightly.

  3. Prepare the eggs. Beat the eggs in a bowl until well combined.

  4. Coat the cheese. Coat the Olomouc tvarůžky first in flour, then in the beaten egg and finally in panko breadcrumbs. For extra crispness you can repeat the coating once more (egg + panko).

  5. Chop the lovage. Optionally chop the lovage finely.

  6. Check the potatoes. Check the potatoes with a fork to see if they are soft. If so, drain the water.

  7. Peel the potatoes. Peel the cooled potatoes and cut them into smaller pieces.

  8. Cut the potatoes. Cut the peeled potatoes into pieces.

  9. Mix the potatoes with butter and lovage. In a bowl, mix the warm potatoes with butter and optional chopped lovage. Season with salt and pepper and mix well so the butter melts evenly.

  10. Fry the cheese. Heat a generous layer of oil in a pan over medium heat. Fry the coated tvarůžky 2–3 minutes on each side until golden. After frying, let them drain briefly on paper towels.

  11. Serve. Serve the hot tvarůžky with the seasoned potatoes. Optionally you can add tartar sauce. Enjoy your meal 🧀✨
