Prepare the ingredients.. Prepare all the ingredients - we will be cooking with them in a moment
-
Cut and peel the asparagus. Peel and cut the asparagus, and set the peels and trimmed ends aside for the stock
-
Prepare the stock. Prepare the stock - add the asparagus peels and ends to the water along with the bouillon dissolved in water, and cook over medium heat for about 10 minutes (or use ready-made stock if you have it)
-
Separate the asparagus tips. Separate the asparagus tips and set them aside, then cut the rest of the asparagus into pieces about 1 cm in size
-
Slice the shallot and chop the chives. Peel and slice the shallot into thin rings, and finely chop the chives
-
Saute the shallot. Heat the olive oil in a pan, add the shallot, and saute over medium heat for about 1-2 minutes until golden
-
Add the asparagus and simmer. Add the asparagus, reduce the heat, and cook over low heat for about 3 minutes
-
Strain the stock and cook the pasta. Strain the stock, bring it to a boil, add the pasta, and cook over medium heat for about 6 minutes or according to the package instructions
-
Add the asparagus tips. About 2 minutes before the end of cooking, add the asparagus tips
-
Finish with Parmesan and chives. Add the cheese, and chives if desired, stir, and serve
