Quark Dumplings with Apricots

What you will need

Quark soft dry 125 g -
Hard quark 30 g -
Apricots 100 g -
Plain Flour 100 g -
Eggs 1 pcs -
Butter 25 g

Apricot juice 50 ml -
Sugar 0.5 tbsp -
Lemon 0.25 pcs -
Baking powder 0.25 pcs -
Lemon balm 0.25 pcs

Steps to cook

Prepare the ingredients. This is what awaits you on the plate – fluffy quark dumplings with warm apricot sauce 🍑🥣 Prepare all ingredients in advance so the work goes smoothly.

Cut the apricots. Wash the apricots, remove the pits and cut into quarters.

Prepare the apricot sauce. In a small saucepan bring the apricot juice to a boil over medium heat. Add the chopped apricots, sugar and lemon juice and simmer briefly for 2–3 minutes, until the fruit softens but does not fall apart. Then remove from the heat and let stand.

Make the dough. In a bowl combine the flour, sugar, baking powder, softened butter, egg yolk, soft quark and optional lemon zest. Work into a smooth, non-sticky dough. If the dough is too wet, add a little flour.

Cook the dumplings. In a large pot bring water to a boil and lightly salt it. Shape the dough into small balls and place them into the boiling water. Reduce the heat to a gentle simmer and cook for 6–7 minutes, until the dumplings float to the surface.

Remove the dumplings. Remove the cooked dumplings with a slotted spoon and let them drain briefly.

Serve with the sauce. Arrange the dumplings on a plate and pour the warm apricot sauce over them.

Finish and serve. Grate hard quark on top and drizzle with melted butter. Optionally sprinkle with lemon balm or another herb. Serve warm 🍑✨
