Roast Duck with Stuffing, Roasted Potatoes, Green Beans

Traditional St. Martin's family feast (if you can't manage to get a goose, of course) consisting of a whole roast duck filled with stuffing and a variation of two side dishes: roasted potatoes and sautéed green beans

What you will need

Duck whole 0.25 pcs -
Green Beans 150 g -
Baby Potatoes 200 g -
Bread Roll 1.5 pcs

Eggs 1 pcs -
Milk 75 ml -
Caraway seeds 0.5 tsp -

Steps to cook

Prepare the ingredients. Prepare all the ingredients – we'll be cooking with them in a moment 🍗✨

Chop the roll. Dice the roll into medium-sized cubes.

Chop the parsley. Finely chop the parsley.

Mix the stuffing. In a large bowl, combine the chopped roll, milk, parsley and egg. Season with salt and pepper and mix thoroughly.

Score the skin and season the duck. Lightly score the skin on the duck breast, close the neck with a skewer or tie with kitchen twine and rub the duck with caraway seeds, salt and pepper.

Stuff the duck. Fill the duck with the prepared stuffing and close the opening with a skewer or tie with kitchen twine.

Place the duck in the oven. Cover and bake in the oven at 180 °C for about 1 hour.

Uncover the duck and roast. Then uncover and roast for another about 30 minutes, until the skin is nicely crispy.

Add the potatoes to the oven. Add grenaille potatoes to the oven alongside the duck, salt and pepper them, drizzle with oil and roast for about 25 minutes, until golden.

Sauté the green beans. Sauté the green beans in a pan with a little olive oil for about 3-4 minutes over medium heat and season with salt and pepper.

Serve. Serve – you can carve the duck into quarters or let everyone carve to their taste 🍽️✨
